The Santoku knife is perfect cutting, slicing, mincing and dicing fruit and vegetables. The knives in the Universal series are full tang.
The blade is Damascus Stainless steel, 33 layers and the core is VG10 steel, hardness 60 HRC. This ensures outstanding and lasting sharpness. The handle is made of pakkawood and is attached to the blade with 3 rivets.

The knife series has been developed in order to meet a lot of chefs’ requests, especially from Western cuisine. Sometimes, they prefer to use the knife they are used to using. This means full-tang blade all through the handle with rivets which makes blade and handle weight balanced well. And also, it feels firmer and stronger if the knife is full-tang for chefs from their experiences.
So the knife design is followed traditional and universal western knife shape and we use acknowledged VG-10 Damascus steel for blade for higher performance and sharpness. Therefore, this knife series is more for professionals and cooking lovers.
